So, you are in a hurry but need to come up with a meal that everyone will love? Try my Quinoa Pasta with Buffalo Mozzarella. I have never served to anyone who hasn’t gobbled it down in a blink of an eye and asked for more!
Recipe
Olive oil
Truffle Oil
3 cloves of garlic
Bag of fresh basil
Bag of fresh oregano
Buffalo mozzarella
Organic tomato sauce
Himalayan Pink salt to taste
1-2 habanero red peppers
Cook the pasta while placing the minced garlic on low heat with a dash of olive oil. Put the tomato sauce on low heat. Quinoa pasta cooks more quickly than regular pasta so keep an eye on it. When ready, dump it in a metal (no plastic!) sieves. Place the cooked pasta back in the pot and add the tomato sauce and lightly heated garlic. Add lots of olive oil (always add the oil after cooking not during to preserve its value) and some pink Himalayan salt. Add fresh, torn oregano and basil. Stir. Add to plate and put one small buffalo mozzarella ball in the center. Add a dash of truffle oil and Habanero peppers to taste. Unbelievable. And what I like to call a ‘foogasm’ (a food inspired orgasm).

Mozzarella – OK I know there is a huge no-dairy-trend going on out there and part of me is sympathetic and listening but the other part of me says ‘like Hell I’m ever going to give up cheese’. Here is why you shouldn’t: hyaluronic acid. Yup, this acid is what makes up the structure outside cells which gives structure and support to skin and helps in tissue repair. Aging costs you this acid. If skin cannot repair itself it will become bumpy and rough! In addition the probiotics in cheese boost immunity, fight bad microbes, improve absorption of nutrients (super important for good skin!) and support production of the wonderful hyaluronic acid. Stick to goat or sheep cheeses for easier digestion.
Basil – has many skin friendly and immunity boosting nutrients and antioxidants. The antioxidants fight free radicals which can cause aging. It contains vitamin K, iron, calcium, vitamin A, fiber, manganese, tryptophan, vitamin B6, magnesium, vitamin C and potassium. Basil is also well-known for its anti-inflammatory properties. Himalayan Pink Salt – contains the full spectrum of 84 minerals and trace elements.
